About this place
Ippudo's two hallmarks offer distinct moods: Shiromaru Motoaji delivers a smooth, clean pork-bone depth without gaminess, while Akamaru Shinaji layers fragrant oil and seasoned miso paste for added intensity. Shiromaru's broth clings lightly to ultra-thin noodles with a pleasant snap, whereas Akamaru pairs hearty tonkotsu savor with toasty aromatics that keep you drinking until the bowl is empty. For heat seekers, Karaka Men adds spiced minced pork, and every bowl can be tailored with varied topping configurations.
When your initial noodles are finished, you can order a full kaedama refill or opt for the lighter ko-dama half portion. A self-serve station provides spicy bean sprouts, pickled mustard greens (takana), red pickled ginger, and garlic, allowing you to dish out condiments and tweak the broth's profile as you eat.
Sides round out the lineup, featuring bite-sized Hakata hitokuchi gyoza pan-fried until crisp outside, and Hakata chahan fried rice tossed over high heat for loose, fluffy grains. Situated on the 2nd floor of a building reached directly from Gotanda Station's east exit footbridge deck, the branch offers table-side tablet ordering so guests can dine comfortably, whether grabbing a solo meal after work or sitting down with family.
